Vinification
Grapes were harvested at early morning hours. These cold grapes had skin contact for 6 hours. A fruity yeast was inoculated to free running juice. Fermentation was stopped at 8 g/l. The residual sugar balances the natural acids in the wine.
Winemaker’s Comments
This off-dry white wine features a delicate hint of fruit and a touch of sugar to give it a softer taste. A similar freshness is found on the palate where restrained appley fruit flavours provide a crisp, dry edge. Essentially a wine to enjoy young for uncomplicated, easy-drinking. Cape Riesling is excellent with salads, chicken casseroles and pasta.
