Vinification

The Whole berries fermented in rotor tanks and cold soaked for 2 days. After the fermentation process was more than halfway done, half of the wine was taken off the skins and pumped into barrels. It was fermented dry in the barrels. The other half was left on the skins to ferment dry after which it was also racked into barrels. Matured in a combinatoin of French and American oak - 1st, 2nd and 3rd fill barrels, for 12- 15 months.

Winemaker’s Comments

Ripe bananas, mulberry and plum make up the complex nose. Smooth, rounded mouth with all the flavour, the nose promised with velvety flow across the palate with sweet fruited, wellrounded tannins. Long, sustained finish. Good now yet has potential to develop over 4/5 years. Good food wine or as stand-alone drink.
